Red Hot Candy Apple Jelly

I have had an interest in canning these last few weeks and found this recipe somewhere online and thought I would try it. I believe the site stated that the original recipe was in an older Taste Of Home issue ( I love that magazine). It has simple, fairly easy to find ingredients and quick and easy to make. It will have your whole house smelling like the holidays.

Ingredients:

4 cups of apple juice

1/2 cup of Red Hot Candy (found mine at Walmart with the movie box candies)

1-package of powdered fruit pectin

4 1/2 cups of sugar (I only used 4 cups)

1 tsp of vanilla (at the end as someone suggested)

In a large sauce pan add the apple juice, Red Hot Candies, and powdered fruit pectin bring to a rolling boil. Add sugar return to a rolling boil and cook for 2 minutes. Skim off foam and undissolved candies. Ladle hot liquid into hot sterile 1/2 pint canning jars leaving 1/4 inch head space, wipe rims clean, add seals and rings. Process in water bath for 5 minutes.

Makes 6 1/2 pints

The pink blush color of this jelly and the wonderful flavor of apple and cinnamon makes it a great homemade holiday gift.
