Valentine’s Day or the Super Bowl it calls for candy to give as a gift or something delicious to snack on! I must confess this may not be the most frugal recipe ever but let me tell you it is one of the easiest and best candies I have ever made.
Just throw it in the crock pot and forget it for a few hours….you don’t even have to stir for 3 hours! No checking a candy thermometer or watching the pot boil. Easy peasy I tell you!

Ingredients:
- 1 pound of salted peanuts
- 1 pound of unsalted peanuts
- 12 ounces of semisweet chocolate chips
- 4 ounce bar of German Chocolate
- 3 pounds of white chocolate bark (like you use for dipping)
Instructions:
- Layer in crock pot in the order listed.
- Do not stir.
- Cook on low for 3 hours,
- Stir to mix well and drop onto wax paper.
- Wait till they cool and harden.
- Dig in.
Notes
It may take a while until they cool enough to harden just be patient and don't place in the fridge. (placing in the fridge will cause it to have a chalky look to it)

This is Sunday Dinner in a bowl!
With all the veggies and flavor of your favorite pot roast without the cost of buying an expensive roast….well fitting for a Ground Beef Budget.
Pot Roast Soup (Crock Pot Recipe)
Ingredients:
- 1 pound of beef stew meat
- 1 teaspoon salt
- 1/2 teaspoon of pepper
- 1/2 cup of flour
- 1/4 cup Kitchen Bouquet
- 1 tablespoon cooking oil

- 1 pound of carrots, peeled and cut into bite size pieces
- 2 stalks of celery cut into 1/2 inch pieces
- 4 potatoes peeled and cut into larger bite size pieces
- 1 medium onion peeled and cut into large pieces
- 1 can beef consomme
Instructions:
- In a medium bowl mix the stew meat and Kitchen Bouquet coating the meat well. Let this sit and marinade 5-10 minutes. Sprinkle on salt and pepper, stir. Add the flour and coat the meat well. Heat the oil in a skillet and add the meat, brown the meat. (you are not cooking the meat thoroughly just browning it well)
- Add the meat to the crock pot, then layer on carrots, and celery and onions (wait and add the potatoes last).
- In a bowl mix the beef consomme and 1 can of water, pour over the meat and vegetables. Add more water to fill just below the highest layer of vegetables. Layer on the potatoes.
- Cook on low for 7-8 hours, remove the lid and stir well and cook for 30 more minutes.

Ok, I confess, I have a sweet tooth (my dentist loves me) and dessert is my favorite part of the meal.
This has to be the most decadent and the richest pie I ever make and the easiest ever, throw a couple of cans in the crock pot and in 8 hours what emerges from those cans is truly magic!
This is copycat recipe for a Caramel Pie you can find at a famous restaurant chain that starts with an O’
Ingredients:
- 2 cans of sweetened condensed milk
- 1 graham cracker pie crust
Instructions:
- Remove the label from the sweetened condensed milk.
- Place both cans in a crock pot and cover completely with water.
- Cook in the cans on low for 8 hours.
- Remove from the crock pot and cool.
- Open cans and pour out into the graham cracker pie crust.
- Keep refrigerated.
- Garnish with whipped topping and slivered almonds, chopped nuts, whatever you like.
Notes
Rich....this pie is very rich. A small slice will do you.

Throw in an extra can and you have caramel dip for apples or a topping for ice cream!
*This makes a pie filling that is about the consistency of pudding it does not make a caramel that can be sliced individually or used for caramel apples.

Rise and shine and breakfast is ready and waiting! That’s the way I like it.
I love steel cut oats but don’t always have time to fix them before work or school since they take so long to cook. With this recipe it is ready when you wake up. I have tried Crock Pot Oats unsuccessfully in the past but with this one you will have an awesome breakfast with just a few minutes work before you go to bed. The secret to this recipe is using Steel Cut Oats and a water bath. Quick oats or Old Fashioned Oats do not work well with this cooking method.
I found this recipe over at Mommy’s Kitchen and tweeked it just a little bit.
Rise~N~Shine Oatmeal (Crock Pot Oats)
Ingredients:
- 1/2 cup Steel Cut Oats
- 2 cups water
- 1/2 cup milk or half and half
- 1 teaspoon vanilla
- 1 tablespoon butter or margarine
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1/4 dried apples or other dried fruit (optional)

Instructions:
- This recipe feeds 2-3 and can be doubled easily.
- Start this recipe just before you go to bed the night before you are wanting to serve the oatmeal:
- *First you must find a heat proof bowl that will hold all the ingredients and will also fit into your crock pot with a space around it for a water bath. Note: If you are using dried fruit they will plump up when cooking so also allow space in the bowl for that as well.
- You can top with cream, raisins, dried cranberries, brown sugar, cinnamon, pecans and walnuts, etc. Get all your toppings out in bowls and cover with plastic wrap so that it will be ready also in the morning.
- Mix all the ingredients and pour into the heat proof bowl that will fit into your crock pot.
- Pour water into the crock pot surrounding the bowl for the water bath and fill to the same level of the liquid in your bowl. Place the lid on your crock pot, head on off to bed, and cook on low for 7-8 hours. If you like a creamier oatmeal add some warm milk or cream to thin it out just a bit.
- You will have a hot, creamy nutritious breakfast ready for you and your family when you wake up. YUM

Crock Pot Pulled Pork BBQ
Sometimes you just want that hickory flavor and don't have the time to slave over a grill or a smoker. I have made this recipe for years. The liquid smoke gives the pork the taste of hickory smoked meat without the smoker. Here in the South we top our BBQ sandwiches with slaw! Delicious!
Ingredients:
- Boston Butt Roast
- 1/2 onion chopped fine
- 1-2 cloves minced garlic
- salt and pepper
- 1/2 cup or more BBQ Sauce
- 2 teaspoons or more Liquid Smoke
Instructions:
- Salt and pepper the roast well. Place Boston Butt Roast, onion and garlic in a crock pot. Cook on low for at least 8 hours. Remove from crock pot and using a fork separate the pork, discarding any fatty pieces. Pour off the remaining liquid from the crock pot reserving 1/2 cup. Return the pulled pork to the crock pot, add BBQ sauce and liquid smoke to taste, mix well. You can use the reserved liquid if it seems dry. Allow to cook on low in the crock pot for at least 30 minutes and serve on buns topped with your favorite BBQ sauce and slaw.

This is a wonderfully simple easy and delicious soup.
Ingredients:
- 2 frozen boneless skinless chicken breast
- 1 can rotel tomatoes
- 1 can black beans (rinsed and drained)
- 1 can whole kernel corn
- 1 package Hidden Valley Ranch Fiesta Dip Mix
- 1 8oz. cream cheese
Instructions:
- Throw it all in a crock pot and cook for 6-8 hours on low. Stir and serve!

When the weather starts cooling off or there is a rainy day there is no better comfort food than homemade chili.
I prefer Mexene chili powder but it is hard for me to locate.
Most of the time I plan ahead and cook my own pinto beans, making a large pot the day before knowing I will have leftovers for the chili the next day. But this is a simple way to make it for items on hand in your pantry.
Ingredients:
- 3 cans of pinto beans
- 2 cans of Kidney beans
- 2 cans diced tomatoes in sauce
- 1 onion chopped
- 1/2 bell pepper chopped
- 3 tablespoons chili powder (or more to taste)
- 1 to 1 1/2 pounds ground beef
- 1/2-1 cup water
Instructions:
- In a large pot saute ground beef, chopped onion and bell pepper until meat is brown and onions and pepper is cooked well. Drain off grease. Return to stove eye.
- Add water and chili powder and mix well. Add beans and tomatoes.
- Simmer for 2 hours. Serve with oyster crackers, top with diced onion, sour cream and shredded cheddar cheese.
- My prepare the night before or in the morning, and cook in a crock pot 6-8 hours on low.

I am on a rice kick lately. I cooked this up for dinner and it was so good. It would also be good for open face roast beef sandwiches. Just mix this up and let it marinate, throw in the oven 3 hours before dinner time and forget it. Once the meat is browned in the skillet it can also be cooked in the crock pot on low for 8 hours.
- 1 pound stew meat
- Worcestershire Sauce
- 1/2 cup Flour
- salt and pepper
- 1 teaspoon dried onions
- 1 can Campbell’s Golden Mushroom Soup
- 1 cup water
- Cover stew meat with Worcestershire Sauce, sprinkle with salt and pepper.
- Let it marinade 30 minutes to 2 hours.
- Put flour in zip lock bag, add stew meat and shake.
- Brown in hot skillet with a little oil.
- Empty into a baking dish.
- Mix soup and water and pour over meat.
- Cover with foil and bake at 325 degrees for 3 hours.
- Serve over rice or egg noodles.
