Homemade Ground Beef & Vegetable Soup

I work every weekend and the last few weeks I have been trying to have something homemade that we can eat on for a few days. So today I whipped this up. I created this soup with items I had on hand and thought they would meld into one tasty soup and boy was I right.  A little of this and a little of that. A little Italian Seasoning and a little Chili Powder. I think it turned out pretty good.

*Note:  After this sits a while if you use red pepper flakes it will get hotter and hotter!

Homemade Ground Beef & Vegetable Soup

Ingredients:

  • 1 pound ground beef
  • 1/2 onion chopped
  • 1 tablespoon flour
  • 1 can Rotel tomatoes and green chilies
  • 1 small can tomato sauce
  • 1 can beef broth
  • 2 cups of water
  • 2 cans whole new potatoes (drained and cut into bite size pieces)
  • 1 bag mixed vegetables
  • 1/2-1 teaspoon Italian seasoning
  • 1 teaspoon chili powder
  • 1/4 -1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1 cup elbow macaroni

Instructions:

  • Brown ground beef and chopped onion, drain off grease.
  • In a large soup pot to beef and onions add flour and stir well until well incorporarted. Add other ingredients except for the macaroni and cook on medium heat for 20-25 minutes. Add 1 cup elbow macaroni and cook for 10 minutes. *You can, of course adjust the seasoning to whatever suits your taste.
  • Serve piping hot with cornbread or crackers.

Do you usually drain the potatoes or use the liquid in those as well as the water and broth?

I am sorry I do not know the calories of this. It is mostly ground beef and vegetables, so maybe it’s not too many!

This may be difficult in the crock pot. I would probably cook the pasta on the stove and add it at the end of the cooking time or omit it all together.

This is one of the best soups ever! A bit spicy so next time I won’t add as much Tony’s seasoning (my fault) but being from the south, I love to add instant roux to make it a tad thicker w a little bit of a gravy taste–only about 5 tbs. Again, Best Soup Ever!!! I had to cook the first part of the soup longer than it said by 15 minutes and also cooked it longer once I added the noodles, almost 10 minutes more than it called for.

Tried this tonight and loved it. I had fresh potatoes that I needed to use up so I subbed those for the canned. I may have added a few too many because once the noodles were added all of the liquid was sucked up. I was ok with that though because I don’t like really brothy soups anyway. I made grilled cheese sandwiches to go with it…the perfect meal on a cold, fall night! Thanks!

It should be plenty for a family of four and have some leftovers. There are only 2 of us here and there was plenty leftover.

It is a good recipe, but SUPER spicy! I even bought the mild Rotel. Maybe I should leave out the red pepper flake, or chili powder next time. What do you think?

You are so welcome, so glad you came back here to share your thoughts on this recipe! I believe I noted in the recipe that the red pepper flakes would make this super spicy. I would leave those out if you don’t like things too spicy!

do you think it will turn out okay if I add some mushrooms and maybe some baked beans? Or would it alter the taste too much?

I wouldn’t let the mushrooms cook too long they get rubbery. I am not sure about adding baked beans, maybe kidney beans or something like that.

I loved that this is so versatile. You can add more veggies, spice it up how you like, and the first time I made it, I used veggies juice instead of tomato sauce. Thanks for sharing!

This was really good, i added a little garlic and left out the pepper flakes. Will make again, it is a little spicy with the Rotel. Leave out the pepper flakes for sure if you do not like super spicy.

Made this soup today for dinner along with homemade bread. I added more seasoning to the soup as I like my food to have alot of flavor and I also added kidney beans and used regular potatoes. It was very good!
